Think U.S. Dairy for upgrades to snacking at IFT15
Stop by Booth 1043 for kimchee pancakes, Moofu meatballs with BBQ sauce and chai pudding samples

ARLINGTON, Virginia, July 12, 2015 — The U.S. Dairy Export Council® (USDEC) will demonstrate the benefits of U.S. dairy beyond nutrition and flavor at the 2015 Institute of Food Technologists (IFT) Annual Meeting & Food Expo. Innovative prototypes at the USDEC booth will showcase the versatility of U.S. cheeses and ingredients in applications ranging from snacks to mini-meals.

According to Innova Market Insights, formal mealtimes continue to decline in popularity as consumers seek quick, healthy foods to replace traditional meal occasions.1 Dairy proteins offer value and versatility to help boost protein intake in different foods throughout the day.

"Our prototypes show how U.S. dairy can help formulators meet consumer demand by balancing innovation with the flavor, natural functionality, nutrition and value offered by dairy ingredients," said Vikki Nicholson, senior vice president, global marketing for USDEC.

The prototypes also cater to top food and beverage trends with a focus on protein (quality, quantity and timing), weight wellness and global inspiration.

  • Savory Kimchee-se Pancakes - Surprise taste buds with a bold Korean twist on an American classic. These savory pancakes pack in 24% of the Daily Value for protein (12 grams) and 25% of the Daily Value for calcium with their combination of high-quality U.S. dairy ingredients. Inspired by the popular fermented food trend, this satisfying snack or mini-meal offers a burst of global flavor.
  • Moofu Meatballs with Reduced-sodium BBQ Sauce - The popularity of meatballs spans many cultures, and this version is sure to be a hit with those looking for meat alternatives. Made with Moofu, a protein-rich meat alternative based on acidified skim milk, these tasty snacks deliver on protein content with up to 16 grams of high-quality protein per serving. Served with barbecue (BBQ) sauce that has 60% less sodium than the leading sauce brand, they’re the perfect addition for meatless Mondays or any day of the week.
  • Chai Protein Pudding This unique take on a classic comfort food adds a little spice to snacking.
