LaClare Family Creamery is a true farmstead operation founded in 1978 with a foundation that is rooted in artistry, family values, and hard work. In the late '70s, eager to return to their rural roots, Larry and Clara Hedrich bought a "hobby farm" in the heart of America's Dairyland. Along with their homestead, they inherited two goats, a dozen or so chickens, and pair of peacocks. Little did they realize, the goats would soon become the focal point of the lives of their growing family. Hence, the founding of what would become LaClare Farms, appropriately named after founders Larry and Clara.

Chandoka

Chandoka is a New Zealand-style Cheddar pressed from whole pasteurized milk cow and goat milk. It is mild and fruity with rich cheddary notes. The cow milk develops sweet buttery characteristics, as the goat milk develops sweet tangy notes, creating Chandoka - a wonderfully flavorful cheese. Great for cheese boards or in place of any traditional cheddar. Chandoka is named after the mother and three aunts of owner Larry Hedrich - Charmaine, Ann, Donna, and Kathy. These four sisters came up with the name "Chandoka" as children and have used it ever since.

Martone

Martone is a part cow/part goat milk ash-covered cheese with a mild, fresh sweet beginning, finished with a pleasing tang. This is a great table cheese with fruit, crackers, or a light beer. Martone is inspired by the grandfather of owner Clara Hedrich, Martin Kozlowski. He was the first generation of the family to settle in northern Wisconsin and began dairy farming.

Cave-Aged Chandoka

The 70/30 blend of cow and goat milk creates a unique flavor profile. The wheels smell of cellar and vegetable notes, while the dense, fudgy paste suggests rich butter, citrus, grass, and earth. Wonderfully complex Cave Aged Chandoka is ever-changing throughout its life cycle. Chandoka is named after the mother and three aunts of owner Larry Hedrich - Charmaine, Ann, Donna, and Kathy.
