Consumer-driven Prototypes Featuring U.S. Dairy at IFT16

Stop by Booth 1931 to sample a yogurt barley soup, samosa and mango chutney cottage cheese dip   

ARLINGTON, Virginia, July 17, 2016 - The U.S. Dairy Export Council® (USDEC) is demonstrating how food and beverage manufacturers can create on-trend products using U.S. dairy ingredients at the 2016 Institute of Food Technologists (IFT) Annual Meeting & Food Expo. The three prototypes contain a variety of dairy ingredients, including U.S. permeate, dairy proteins, Greek-style yogurt and cheese, to achieve a unique set of taste, nutritional and functional benefits.  

Convenience is crucial now that consumers eat more frequently throughout the day and look for products that seamlessly mesh with their on-the-go lifestyles. Foods like snacks, dips and soups are popular with millennials and boomers for their ability to provide flavor innovation, simple ingredients, quick consumption and high-quality protein while supporting healthy aging and weight management goals. Formulators can use one or more dairy ingredients to achieve these desirable benefits for increased appeal.  

"Our prototypes were carefully crafted to show how U.S. Dairy can be incorporated into a variety of applications to achieve formulation needs and create products that consumers crave," said Vikki Nicholson, senior vice president, global marketing for USDEC.  

With a focus on increasing quality protein levels, reducing sodium and having cleaner labels, the flavor, function and nutrition of U.S. dairy ingredients make these prototypes stand out.  

  • Yogurt Barley Soup - Inspired by the traditional Armenian Tanabour soup, delicious herbs and barley combine with the high-quality protein in Greek-style yogurt to soothe and satisfy. This soup is an excellent source of protein, with each serving providing 25% of the Daily Value for protein plus other vitamins and minerals. Enjoy a warm bowl for a creamy, comforting delicacy.
  • Protein-packed Samosas - East meets West in a savory hybrid of samosas and empanadas. Paneer cheese helps fill these tasty protein-dough bites that pack 11 g of protein (22% Daily Value) per serving. High-quality U.S. dairy ingredients like Greek-style yogurt, whey protein, milk permeate and butter round out this snack, which is perfect for any time of day. They're sure to please the palate with a truly international flavor.
  • Mango Chutney Cottage Cheese Dip - Spice up your snacks with this flavorful cottage cheese dip. A blend of mango chutney, curry spice powder and high-quality U.S. dairy ingredients, including cottage cheese and milk protein isolate, provide a surprising thrill for the taste buds. Plus, it's 50 calories per serving, with recognizable ingredients, making it a clean-label option for a unique dipping experience.
